Turn oven to 375 degrees. Place unwrapped margarine in 8x8 glass pan and put it in oven to melt. As it is melting, combine the sugar, eggs, vanilla, baking powder, and flour. Take melted margarine out of the oven and swirl to coat pan. Add melted margarine to the other ingredients and mix well. Gently fold in blueberries (if using frozen, do not thaw).
Bake for 30-35 minutes, until golden brown on top.
This delicious baked good is my “go to” when we have overnight guests. It’s perfect in the summer with fresh blueberries, but frozen work well too. I like to serve it topped with Cool Whip. Geoff loves the kuechen, so I usually double the recipe and make it in a 9x13 pan….it never goes to waste.
